Our food? It could practically skip from the field to the plate – that’s the Peebles Hydro way. Our Head Chef Grant’s seasonal menus are bursting with local Borders produce, some of which we grow right here in our gardens. Truly, Peebles on a plate. Our drink? We brew our own beer on the grounds and 1881 Gin is always on hand from our bars and restaurants. Just the ticket. Little ones we haven’t forgotten about you, we’ve got all of your favourites too.
Our Head Chef, Grant, has been busily preparing your feast. Expect familiar, filling favourites, and he’s a dab hand at adding interesting twists to the plate and palette. You’ll find the menu packed full of ingredients sourced from right here in Scotland’s larder – and lots of the veggies come straight from our very own gardens. So naturally, there are plenty of vegetarian options, as well as your favourites straight from the grill.
The restaurant is also the home of ginormous breakfasts. Where sausages, eggs, bacon and more are munched happily in the morning, with light flooding through towering windows.

The Miller Lounge is a relaxing spot for a wee drink and something to eat.
Relaxed and informal, with views as far as the eye can see. The Miller Lounge is a popular spot with our guests and it’s easy to see why – the views, the gin palace. Not forgetting our delicious menu available to enjoy in the Miller Lounge or in Not the Cocktail bar.

Don’t be fooled by the name…this bar does serve cocktails and a whole host of other things. Our Not the Cocktail Bar has an easy-osy atmosphere. Despite the name, there are plenty of cocktails to choose from – not to mention our HUGE choice of beer, wine, gins and other spirits.
Snuggle by the fire with a bottle of wine, grab a table for the whole brood and order a few favourite drinks from our menu or find a spot in front of the TV.

Dainty sandwiches, plump scones, and mountains of cream and jam – all present and correct. With air-light macarons and science-defying miniatures topping off the cake stand. Not forgetting teapot after teapot of glorious Darjeeling, Assam, Earl Grey – you name it, we’ve got it… Pinkies at the ready.

The furnishings are local, we’ve used materials from the March Street Mills to give you a sense of Peebles’ rich history in textiles. The pictures on the wall trace the old house back to its original owner Henry Ballantyne; brother of David Ballantyne, who established the Mills in 1884. Not only are the benches upholstered in tweed patchwork salvaged from the mills, but you’ll also spot some throwback keepsakes including a vintage sewing machine and a poster describing the Cotton Mills and Factories Act.
